Quang Nam Noodles (Mì Quảng) is a typical specialty dish of Guangnan and Da Nang, Vietnam. Known for its rich flavor, striking color, and tender meat and noodles, it is an extremely delicious dish that locals eat daily. Noodle shops can be found everywhere, especially in Quang Nam and Da Nang.
Gourmet features
Although the Vietnamese word "Mi" means white flour, "Mi Quang" is actually a type of rice noodle. Rice noodles are generally boiled with fine rice flour, gardenia water and eggs until golden brown, wrapped in a thin layer, and then cut crosswise into thin noodles of about 5-10 mm.
The noodles are served with pork, shrimp, chicken, black fish (sometimes boiled egg) and pork bone soup. People also add dry roasted peanuts and pounded, chopped green onions, herbs, red peppers... Usually this broth is called water, but this is also a broth, but very concentrated and less watery. In addition, the noodles are made of sesame rice paper and crispy roasted peanuts are added for a unique flavor.
There are three kinds of the most famous Guangnan rice noodles, one is shrimp, one is bullfrog, and the other is chicken.
