Hue Beef Noodles(Bún bò Huế)

Hue Beef Noodles is one of Hue’s specialties and is loved by everyone and can be found in all 3 regions of Vietnam. This dish has the perfect blend of sour, sweet, fresh, spicy, and lemongrass flavors. Compared to Vietnamese noodles, Hue beef noodles are thicker. The beef brisket is first marinated and then stewed with beef bone soup, which completely softens the beef and makes the soup extremely delicious.
Gourmet features
The history of Hue Beef Noodles can be traced back to the Nguyen Hoang period (around the 16th century). Use cooked beef to make vermicelli stock. Since then, Hue beef noodle soup has been born, preserved and developed for several generations. So far, Hue Beef Noodle Soup has been modified with many other ingredients such as pork rolls, pork blood, crab cakes, etc.
The soup base is spicy, with lemongrass spices. The ingredients include pork blood, beef tendons, beef tendons and beef balls. It is paired with onion slices. I also like to squeeze a lot of lemon juice.
